Tadashi Enami is a nationally certified Dentoukogeishi (master of traditional crafts) who specializes in forging knives using the wakashizuke technique of bonding iron to hard steel when making single-bevel knives. He uses iron powder and heat to do this, which is customary with old-school blacksmiths in Japan. We do not carry a saya that fits this knife.

Superb knife for serious sushi applications. I'ts been my daily driver at my sushi station alkng with my Kohetsu 240mm hap40 kiri gyuto and it does not disappoint. W2 on this particular knife cuts & maintains better than my Hokiyama 240mm & 270mm Yanagi's. Would reccomemd for he serious sushi professional.
