We asked our team in Japan to make a longer bread knife but doing a new blade die proved difficult, so they came up with the idea to extend the machi to give it a longer feel even though the working cutting edge is the same as the standard model. It came out great!

recently impulse-bought this as I need wa handles on everything, however it performs extremely well as a bread knife, my old bread knife was the Tojiro ITK 270mm bread knife, and both knives now have been used for service in a very bust restaurant. the kohetsu knife holds up very well, with little flex in the blade and a general feeling of sturdiness. the blade itself is very thin, and nice and light so it doesn't strain my hand when slicing bread in large volumes, which was an issue that I had with the tojiro after ~10 loaves of bread.
