Funayuki originally, the funayuki was designed as a multipurpose knife for fishing boats. Today, how the term is used depends on the knife maker and how they choose to design and market their knives. Several features common to funayukis are: a fairly flat blade profile with relatively little belly; a short, handy size; and the knife may or may not be a single bevel. In general, these knives make great complements or replacements for the gyuto or chef’s knife as a jack of all trades in the kitchen.
