sujihiki from the Masakage Kiri line of knives looks the part with a beautiful Damascus cladding, impeccable fit and finish, and a striking magnolia wood handle with red pakka wood ferrule. The knife features a VG-10 steel core, a steel designed for cutlery, which is hardened to 61-62 HRC. As both VG-10 and the Damascus cladding are stainless, the knife is easy to care for. The knife is handmade by Hiroshi Kato, a master blacksmith from Takefu Village with over 50 years of knife-making experience.
