"Nashiji" means "pear skin" in Japanese and the blades are finished with a nice matte, texturized way that you see here. These are san mai knives (clad) and the edge steel is Hitachi Blue #2 (also called Aogami #2) carbon steel. Please dry the blade after washing it to prevent rust.
