Yanagibas are Japanese slicing knives that are primarily used in sushi preparation but they can also be used as a general purpose carving knife as well. The knives have a hollow ground back and a convexed grind on the front so most of these are right or left hand specific. Some makers call their 2 sided slicers Yanagibas as well but these are usually considered Sujihikis. If you have questions check the individual item pages for more information.
