Shirogami is another word for white #2 steel. Some also call it white paper #2 because the steel is wrapped in white paper from the steel mill named Hitatchi. These knives are reactive carbon steel and they sharpen up really easily and hold an edge well. These are great knives for those who want to try a good-value carbon steel knife. This Usuba is made with a satin finish that is shiny. All of them will develop patina over time and you need to keep them dry or else they could rust.

As always, CKTG homeruns delivery and support! Great objective review of this knife, i received exactly what I expected. This is an excellent value of a knife if you're willing to put in a bit of work to spit shine the fit and finish. A very good OOB edge and a knife consistent with the knife reviewed in the video. I would recommend Tojiro knives and always recommend CKTG!

You simply will not find a better value if you want or need an usuba. I work in a Japanese kitchen and put this knife straight to work. It came with a decent edge out of the box but will no doubt take a much finer edge. I did several hours of prep work a day cutting all types of vegetables for almost 2 weeks before it needed sharpened. I don't have time to baby knives at work so it got wiped dry with a towel after use and placed on a shelf. It has developed a nice rainbow patina and shows no signs of rust. Very impressed, have to give it a 5/5 for value and performance,and although fit and finish could have been better this is a true workhorse knife that is a blast to use! Perfect entry-level usuba.
