The Tojiro 135mm Petty R2 Powdered-Steel is one of our favorites. The Tojiro brand name is synonymous with high value knives and kitchen tools. They are the gateway brand for many chefs and home cooks entering the world of Japanese kitchen cutlery. We have been selling the ever popular DP line for many years with users loving the price-to-performance ratio of these ubiquitous knives.

We are now offering a couple of new additions to the Tojiro line which we are certain will be popular with both home and professional chefs. The knives are a step up from the DP range. They feature an inner core of the highly regarded “super steel” called R-2. This is also known as SG-2 and it is a powdered metallurgical alloy. This is very hard steel which has recently found favor with many leading blacksmiths. The core steel is clad with softer stainless steel.

Powdered metallurgical steels are high carbon, high alloy stainless steels that have been powdered into a very fine grain and then sintered back together. This results in a steel that has consistent properties throughout the manufacturing process.

This Tojiro Pro R-2 petty has a really well-executed convex grind. It is beautifully thinned behind the edge with commensurate levels of fit and finish. If you are seeking a knife that is a step above the DP line, but one that continues to offer a wonderful price-to-performance ratio, the Tojiro Pro R-2 petty could be just what you are looking for.

    I found this knife and this website through America's Test Kitchen/Cook's Illustrated equipment reviews, and I have to say that I'm quite impressed!

    First, the knife comes super sharp out of the box, easily doing push cuts on paper or shaving hair off your arm (if that's the sort of thing you like to do to test your knife's sharpness). For more... realistic... kitchen tests, though, it cuts tomatoes tracing paper thin and can hold its own through carrots, potatoes, etc. It's not a large knife, so you definitely want to know when you will need to switch to a chef's knife, gyuto, cleaner, etc. It's also NOT a paring knife, so it's a bit too big/bulky for fine work. It's just such a fun and lovely knife to work with for all those in-between tasks, and I've found that I love it for preparing small meals for my wife and I. Sure, I could probably use a chef's knife, but this thing is just FUN and nimble!

    I'm not a professional cook, just an enthusiast home cook, so take that into account for your use case. Personally, I will say that the choil could have been ground down a bit more, but I did it myself relatively quickly/easily, so it wasn't a significant issue for me.

    The real danger of this knife is that now that I've tasted what a really good knife can be, I already bought myself a quality gyuto just a few weeks later.

    I'm really looking forward to using this knife over the upcoming years/decades. I'm really good optimistic about what the powdered steel core will be able to do and how it will be about to be re-sharpened. I did a bit of materials engineering in college and the science/metallurgy sounds right to me!

    Perfectly sized for light line work, veg and fruit prep, etc, but it will let you know when you're asking too much as there is some blade give on heavier work. The thin blade has its merits, but you'll have to reach for a heavier knife for thick or dense veg like beets or jicama. Good handle and grip, decently sharp out of the box. Mine came with a rather large burr at the bolster end of the blade. Large enough that it should have never made it out of the factory, or out of the retailer and it my opinion makes a factory second. Fixable, but that makes it a 3 instead of a 4.
