This was a "buy to try" knife for me. Takayuki makes great knives for the high end and mass market. This one is in between.
The good: Nice profile, excellent grind, thin but solid feeling, great looks including the handle. The steel feels like a cross between AEBL, Ginsan and SG2.
What I didn’t like: the Takayuki name stamped on the knife. The knife doesn’t feel like it has any soul, either.
The verdict: The performance is worthy of the Takayuki name. It cuts and cuts well. Fine tip, but sturdy enough for tough ingredients. Excellent looker that is easy to care because it is stainless. This is what Shun would like to be. Four and a half stars.
