The sujihiki is a Japanese-style slicing knife with a thinner, sharper edge than Western slicers. The long blade of the sujihiki is ideal for thinly carving cooked meats and slicing terrines and patés. The short height of the blade creates less friction when slicing and the blade draws through fish and meat effortlessly. The sujihiki is often regarded as the Western style equivalent of the traditional yanagi knife. It is perfect for those wishing to do their “sushi thing” without the added complexity of using and maintaining a single bevel blade.
Shibata-san crafts extremely well-finished knives from a core steel of R-2 powdered stainless alloy. They are laser-like blades with extremely well executed grinds and edges. The spine and heel are nicely smoothed for comfort and the out of the box edge feels like it was refined on the very best natural stones.

Incredibly sharp laser-type knifeas I warn my friends checking it out "if you touch it, you will bleed.". We are vegetarians so rather than used to slice fish or meat, this knife is our "melon" knife, for which it works superbly.

This thing is an absolute laser for a sujihiki! Crazy thin and not just for a 270. Ridiculously sharp out of the box. F&F is second to none. The performance is unreal. A real treat to use. I now want three more knives from this line as I love this one so much! I highly recommend it.
