Aogami Super is steel prized for its wear resistance, ease of sharpening, and ability to achieve exceptional levels of hardness and, by extension, very refined and acute edges. This steel is found at the core of the Moritaka Supreme 165mm nakiri and is heat treaded to achieve a Rockwell Hardness rating of 64-65 which we find to be an excellent hardness for AS. The core steel is clad in soft iron and rendered with a kurouchi finish which provides a beautiful rustic aesthetic to the blade.

Crafting blades since the 13th century, Moritaka Hamono produces some truly prodigious knives at very attractive price points.

    This is my second Japanese kitchen knife. My first was a Yamashin Blue #2 Santoku. I enjoy both very much, but this Nakiri is different. It is lighter and smaller than I expected, nimbler, reminiscent of a straight razor. I believe I could shave with it. Everything cuts so easily. And the smoothness of the cuts can be felt with the tongue when you eat a slice of the carrot you cut with this knife. The carrot feels like plastic until you bite into it; then you taste everything. What an incredible knife, especially for the price!

    I have been researching nakiri's for quite some time as I wanted something that could rip through veggies. I also found that I wanted to try Aogami Super and a knife with almost no belly. I "settled" on this masterpiece. I opted to the knife sharpening service and I am glad I did. The very first thing I cut with this thing was myself. And man was it smooth. Nicked me like butter. Enough about me, let's get to the onion. I have never used less effort to cut a veggie in my life. It was almost as if when I touched the knife to the onion it just melted through it straight to the cutting board. I got the finest mince ever. This is WAY sharper than my Kramer. In short, this was an amazing purchase and I will be making more.

    I ordered it because my friend uses Moritaka and recomended it. It is first time ordering through CKTG, and I love it. Shipping speed, customer service, packing quality, and etc..
    I love this knife because the edge last very long. I use knives about 9-10hrs a day, and this knife still keeps the edge just like the first time using it right after being sharpened. I really don't worry about sharpening it often like other knives because I dont need to.
    I want to post a picure if I can. It was a scary sharp out of the box and now it is screaming sharp after I sharpended it.
    I have more than 15 knives (average value of $150~$300), I rate this knife at least top 3.
    Highly recommended.

    I have had this knife for a few years, time for a review. This was my first Japanese knife. I had a larger Chinese cleaver made for me and this seem to be a good smaller options. It was.

    I liked the slight nick take off the front edge and, most importantly, the design and steel. This is not an overly refined knife. It is what I think the ancient Zen masters were looking for in the Kizaemon Ido tea bowl, beauty in functional simplicity. You chip the edge, sharpen it down and it works as new.

    I always thought traditional Japanese farm house would have thatch on the roof and this nakiri on the chopping block. It is best for home kitchens. Your kitchen needs one. Mine came with a rosewood D-handle. I wish they still made them. Enjoy this knife.

    Great work knife. Didn't know what I'd been missing as far as not having a nakiri. I also have a KS250 that is the best knife I've ever owned, and this one isn't far behind. Great for a big pile of veggies, very nimble and thin and the AS is, well, super! Great fit and finish, and, as always, quick shipping and well packaged. Mark is always a class act. Don't let naysayers sway you away from Moritaka, they are simply superb tools.

    Wicked sharp ootb. Watch your fingers. This steel is no joke. I've played around with blue 2 and white 2 in addition to the aogami super. Nothing performs quite like it. It?s easier to sharpen than people say. I think it?s more reactive than I?d hoped initially, so she?s no line knife, but she?s a prep workhorse. The one downside of this knife is the kurouchi finish. It?s beautiful, but it wears off really quickly. It doesn't really matter though, it just means you need to pay more attention to keeping it clean.

    I've had this knife about two months. Holds an edge like nobody's business, and it is really easy to maintain. Out of the box it's sharp enough to shave hairs, and after a couple of days working on the line, a few passes at a 3000-4000 grit stone will get you back to where you wanted to be.In my professional opinion, this is not a commercial kitchen knife, nor should it be considered for an introduction into carbon steel. The price point is there, however, it's understated from many sources how delicate a kurouchi finish actually is. Beyond that, the face of the blade that is still Aogami Super is much more reactive than I anticipated and I haven't even used this knife on anything acidic.That being said, the performance you can receive out of this knife is probably almost unmatched for the price. It is truly a remarkable step up.Big thanks to CKTG. Super fast delivery.

    This is my first knife from CKTG. I decided on the Moritaka after talking with Mark and others on the CKTG Forum. Excellent place to go for any questions you may have. I had excellent sales and service from Mark and CKTG. Knife arrived quickly and well packaged. F&F were very good. Very Sharp OOB. I have cut a lot of trinity with this knife and it cuts silky smooth. Overall very happy with this purchase. I will be buying more knives and accessories from Mark and CKTG!
