The Moritaka bunka is a nice general-purpose knife that is small enough for easy control but also tall enough to be able to chop and push-cut effectively. Moritaka Hamono makes these knives for us using Aogami Super steel with a Rockwell hardness of about 65. They take a very nice edge and hold it well.
