This 240mm gyuto from the Masakage Yuki lineup is crafted by master blacksmith Hiroshi Kato. It is constructed of a Shirogami #2 carbon steel core, clad in an easy to maintain stainless steel. Shirogami #2, known for keen edge taking, couples with the Yuki’s incredibly thin grind to make the Yuki a purebred performer in the kitchen. Aesthetically, the Yuki is loaded with character, wearing a refined but rustic nashiji (pear skin) finish. Individual knives may vary from the posted specifications. The core steel of this knife is reactive and will patina with normal use.

Great all-around knife!

I'm a prep cook and I chop a lot of herbs, and do some delicate work with tomatoes which necessitates a very sharp knife. However, I also need to be able to quickly work through potatoes and onions. My copy came sharp enough to do the job, but I spent a little time on it after service. Takes an edge like nothing else I've experienced. Though it's a larger blade, its incredible lightness and balance makes it feel as maneuverable as any 8 inch Western knife. My copy came nicely wrapped and boxed, with a yen piece and a slip of paper denoting the blacksmith and sharpener.
Fit and finish on the knife are excellent. The spine is sanded smooth, and there are no gaps in the assembly. The knife comes with a slight distal taper for great tip performance. My only issue is with the handle. I really enjoy the sanded finish, but the fact that it's not stain resistant means that it can be easily marked in the kitchen. However, these stains will come out with a bit of scrubbing in my experience.

Having this knife for around two years and all I can say is "wow". For the price they sell at, one would think that it wouldn't perform as well as it does, but one would be wrong. It's stellar performance and rustic beauty makes it's the go to when slicing fish on the line or carving in a banquet setting. If you are worried about dipping your toes into masakage, please take my advice, dive head first. You won't be disappointed

They have great products,fast shipping and good service.I have been building my knife block collection with the great Masakage Yuki knives.This 240 Gyuto followed my Yuki 210.The Yuki's are beautiful with an outstanding sharpness and fit and finish right out of the box.I'll warn you all though,I have spent hours on their website and the choices are hard because there are so many knives with hands of talent and old tradition making up their composition.I chose the Yiki and a few others as my prizes.

after 2 weeks of work: holds an edge quite well, a bit thick where the primary grind starts but doesnt wedge much at all, great food release/separation, finish on the cladding looks greatthis is my first white steel knife. i was kind of hesitant in regards to edge retention but after sharpening it and using it for 90+ hours (on poly boards nonetheless) it's been great.

I am a fanatical home cook with an obsession with sharp things. While looking for a new knife I came across CKTG, and i am so glad i did. The amount of info you get on this site makes making a decision so much less stressful. Now about the knife, WOW first thing out of the box scary sharp (bald spots all over my arms) and I've had it for about a month and while maybe not at a pro's volume i do a fair amount of cocking every day and at least 8 hrs in the kitchen on the weekend. That said with just the Richmond strop kit i also ordered I've been able to keep it shaving sharp since i received it. Awesome experience cant wait to order my next one. Thanks CKTG!!!

Nothing in my lineup goes through a watermelon like this knife, in fact the only thing that comes close is my 270 Koishi which I will break out on the larger specimens.. The handle is more beautiful than pictures will do justice and the core steel is a joy to sharpen. I am sure this will be in regular rotation for a long time.

Personally, I'm torn with this knife. It has a lot going for it and is a quality knife, but my copy didn't live up to the performance I expected. Pros:Steel sharpens amazingly well.Beautiful knife.Great general profile for all cutting styles.Thin behind the edge.Cons:My copy has significant shoulders at the grind and hence, wedges quite often. My copy does not have much distal taper and the tip performance is only so / so. I stated the cons with my copy because I am curious if it was unique to me as others do not seem to have these issues. If the wedging didn't happen so often and the tip was thinner, this would be a killer knife. I love everything else about it and it really is a stunner.

I use this knife everyday during prep. It goes through everything. The fit and finish are great. The handle is just sanded super fine, which is nice because it offers more grip. This was my first Masakage, I now have three. They make excellent knives at an affordable price.

I'm a line cook, and I use this knife everyday at work for most of my shift. Out of the box it was sharp enough to shave my arm, and it can take a scary sharp edge and will holds well. It's got a great balance to it, and is light but heavy enough that it doesn't feel delicate. I love the finish on it, in fact that was the deciding factor for me. I was looking at other knife of the same quality and price range, and decided on this one because of it's looks. I'm glad I chose it, it did not disappoint.

This is my second purchase from here in a week. I was looking at several gyutos in this price range, and decided on this one based on the looks. It didn't disappoint. The handle is comfortable, it's well balanced, and has a nice weight to it. It is also sharp enough to shave with out of the box.

I bought this knife on the recommendation from Mark I originally ordered the 240 Mizu but it happened to be out of stock when I ordered but not listed as out of stock on the website. Mark asked me if I would like to have this one instead. I wasn't sure if I would like this knife or not but now that Ive had it for a year I love this knife. Its sharpness is superb with good edge, just the other day I took this knife to lemon grass which my one german knife has trouble with. The Yuki made if feel like the lemon grass wasnt even there. After the hour or so of prep I tested how well the edge held up and even though I could feel a reduction in sharpness I could still push cut paper. I took the knife and stropped it across balsa loaded with diamond spray to refresh the edge which worked wonderfully. All i all I love the entire Masakage line and wish I could afford all their blades.

This was my first Japanese knife purchase and I found the videos and the reviews/recommendations very helpful with narrowing down the choices and making the selection. I had been using a 10 Henckel's and was looking forward to the the different handle type and forward balance point, the grind, along with the lighter weight. When I received and used the new knife, it was all I had expected and more. It felt so much more natural to use for various cuts and the weight was a welcome change. The fit and finish were excellent.The downside was gaining the awareness of what's available and what a difference it can make, for a small cost?.

Awesome knife - our first Japanese knife, love the WA handle. One reviewer was disappointed with the finish on the handle - my perception as a part time woodworker - it has fine grit in the finish intentionally to aid grip - it is NOT poor quality - the very smooth red band supports that theory. Love the Yuki!

Could not be happier with this purchase. I dug deep in my pockets for this piece but it is definitely worth every penny.I watched the videos about the knife and assumed it would be heavier, but I was wrong. It's very light for a blade-heavy knife. Balance point is further than where one would have a pinch grip, just as the video said. The aesthetic is just simply stunning and edge OOTB is exceptional. All in all a quality knife. Definitely worth the investment. Thanks CKTG for the fast shipping!
