The Koishi line features a stainless steel kurouchi finish. The kurouchi finish at the top of the knife helps keep these knives relatively low maintenance when compared with other Japanese carbon knives. The edge of the blade, however, will form a patina as it is made from Aogami Super Steel. Hardened up to 63:65 Rockwell, edge retention of these blades is outstanding.
