They feature cherry wood octagonal handles and stainless clad Aogami Super Steel in the blade. Aogami Super is one of the best steels for kitchen knives as it takes a great edge and holds it for a long time too. The stainless cladding helps reduce blade reactivity and the tsuchime (hammered) finish from which this knife takes its name ("koishi" means pebbles) provides the knife some anti-stiction properties. This knife is as beautiful as it is effective...I give it 4 stars for performance but could have had a better rating if it were a true 50/50 bevel on the blade...being a left handed chef I noticed it to be a bit more flat above the grind...not sure if it was intentional or part of the handmade uniqueness of the product...overall I highly recommend this knife and will say it only gets more beautiful with use

This is my easily my favorite knife to date. (purchased used about a month ago) It is Very thin behind the edge. Very hard steel that is maintaining a razor's edge very nicely. I use it most days for work, no need to sharpen yet. I'm looking forward to more Masakage's in the future.
