This is the second Kohetsu 240 mm gyuto I have purchased. The first was a wa gyuto. I wanted this one because I prefer a western handle. Kohetsu knives are sharp, easy to keep sharp, ergonomic and attractive. This knife is well balanced, a pleasure to use and a joy to just look at. Well worth the price.
