The Kohetsu line of knives is produced exclusively for Chef Knives To Go. This 130mm petty is clad construction with an SLD tool steel core. SLD is well regarded for its good edge taking and edge holding properties. The core in these knives is hardened to a rating of 61-62 HRC, striking an excellent balance between taking acute bevel angles and retaining a high level of toughness. Upkeep on this knife very easy thanks to SLD having a high degree of stain resistance and a stainless steel cladding. The knife has a very unique and attractive aesthetic with a lattice work texture and a polished finish.

I use this knife mostly for cutting fruit in a home kitchen. It's great at peeling pineapple, slicing out apple and pear cores. I was initially concerned about the thick heel, but it has not been a problem. It feels great in my hand. The cutting steel does tarnish a little, but this can be kept to a minimum if rinsed in water then dried soon after use. I have been using a ceramic rod for sharpening and 5–6 passes sharpens the edge nicely. I have had it for over 3 months and have not had to put it to a stone, the rod touch up keeps it very sharp,

Wanted a petty to slot in between my 90mm paring and my longer 160+ mm nakiri, gyoto, bunka.Haven't been disappointed. The usual Kohetsu F and F, plus SLD - an eye-opener for me who had not regarded stainless steels as worthy cutters. Retains a good edge and is a nice size for smaller stuff like garlic, scallions. Hammered feature on blade sheds well on grippy veggies like potatoes, but has a tougher time on hard fruit (apples) because of its hefty blade thickness. I have other knives for that, however. A great addition to my knife inventory!

I'm a big fan of the Kohetsu SLD line of knives. They take on an excellent, durable edge, once sharpened, and are very, very stain resistant.I'll admit, I bought the SLD knives for my family to use, and to keep them from damaging my more expensive carbon/reactive knives! But, I sure don't mind using them myself, because they're all a pleasure to use! In addition to this 130mm SLD Petty, I also own the 210mm SLD Gyuto, and the 170mm SLD Santoku.
