The Kohetsu HAP40 Wa Petty 150mm is a mid-sized petty which can do service as a perfect all-around utensil for chefs of all kinds. It’s small enough for the most intricate work, like garnishes and handheld peeling jobs, yet large enough for more general cutting and slicing duties.
The slim and light blade measures just slightly under the advertised 150mm with a nice height of 30mm. It has a nicely shaped tip and gently rounded belly forward of the main cutting area. While it is on the thin side of petty blades it is certainly no laser. This fine utensil features a progressive grind and is finished with a symmetrical 50/50 bevel.
HAP40 steel is manufactured by Hitachi Metals and the robust core semi stainless steel is then clad in a full stainless alloy for added protection and strength. The exposed HAP40 edge will eventually take on a nice patina. Strong performer and a good value

This is my first HAP40 kitchen knife. Performance has been exceptional after an initial sharpening and I had no difficulty in improving the edge. The edge as received was a bit uneven, but not terribly so. The cladding line is not very uniform and almost non-existent in a couple of spots. The handle fits an finish is superb and the tang entry very well sealed.
Overall I am very well pleased. It literally falls through everything it touches and I consider it a great value.

CKTG, as usual, delivers! I think HAP40 is my favorite steel to date. It takes a screaming edge and holds it. I love this knife, fit and finish is high quality, blade geometry is good.

The cutting edge on this knife is amazing. It came extremely sharp out of the box. The blade is the perfect thickness and size. The handle is perfect. I have two minor fit and finish complaints though.
The edge has a minor defect where the heel was ground unevenly. Looking at the profile, the last 3mm of the edge at the heel was not ground in line with the rest of the edge, it protrudes about 0.5mm. It should be easy to correct this at the next sharpening.
The finish of the blade is rough and causes a lot of friction with the towel when wiping down the blade. I am not sure if this is intended for food release, but it takes some getting used to even with a wet towel, the knife does not slide through the towel.

I have had this knife for about a month now and I've used it pretty heavily in a commercial kitchen for steak butchery, delicate knife work, and a lot of day-to-day kitchen tasks as needed. It came relatively sharp out of the box but a touch up on the 8000 stone and leather strop really made like a razor. I've been using this knife hard daily and i haven't needed to touch this up or even put it to the ceramic steel since I've received it and I don't believe that I'll need to anytime soon. I'm going to keep putting it to the test for this next month and if I continue to love it I will be adding the 210 Gyuto to my collection as well.

HAP40 is an amazing steel. I've got VG10, ZDP189, Elmax, and other super steel knives, but this one is better. It is very easy to get the blade scary sharp using Spyderco ceramic stones and a strop.Cutting vegetables and meat is effortless.The knife is very light and stiff which seems unusual. The grain on the handle raises after getting wet which provides better grip. I love this knife.

The steel on this is incredible. The blade, cladding line, and edge are absolutely beautiful works of art. The handle also looks very professional and has very good F&F. I do have a few minor complaints, but not enough to take it's 5 star rating away for the cheap price of this guy.The OOTB edge was pretty uninspiring, I'd give it a 5/10The handle is extremely dry. I've used the wood was or whatever they sell here on CKTG twice and it's still soaking it up. I recommend getting something for it and treating it extensively so it doesn't stain right away, especially with the white color. The blade itself is very difficult to remove fingerprints from, which is a shame because it's incredibly gorgeous. Maybe I just need to find a new method for it.But performance is 5/5edge retention is 6/5ease of sharpening is 4/5for me, this is a 5 star knife for the price. If it was $200 I would give it 4 stars for the small things above

This has become one of my most used knives in the kitchen. The HAP40 blade came very sharp OOB, and held that edge for a long time. It was easily brought back to sharp on a table jig using diamond and Shapton stones. This knife is that perfect size that allows use in hand as well as on the board. I use it for everything from trimming fat off pork and beef cuts to slicing lemons and taking apart chickens. I plan on buying several more of the Kohetsu HAP40 knives offered by CKTG, IMO this steel offers the best compromise of edge holding, toughness, and corrosion resistance.
