This Kohetsu HAP40 Gyuto 180mm is an all-purpose knife that is ideal for home users who want something that's easy to handle and control and not too big. HAP40 steel is at the top of our knife steel list. This excellent alloy is manufactured by Hitachi Metals. It is a fine-grained alloy that can take a really sharp edge. It can also be sharpened with relative ease. The inner core is further strengthened and protected by a fully stainless outer cladding.

We are very fortunate it be able to offer these exclusively made knives to you. They represent a merging of traditional (methods) with modern (materials) and they would make a great addition to your kitchen knife roll or block.

    HAP40 steel is new to my lineup but it will be a growing part of my knife range after purchasing this 180mm gyuto! Got finish sharpening and this thing flies through anything it touches, literally. One downside from my perspective is that it's definitely more handle heavy than Steve shows in the video (I find the balance point just about 1/4" into the ferrule). Understand that this handle is different from the Ho wood handle displayed so this wasn't anything incorrect, it's just a change from that style and the handle is beautiful (no disrespect to Steve, his videos are fantastic!). Overall, this knife gets a 5 star rating and Mark gave the right recommendation again. Thanks all at CKTG, I'll be back again.
