I can barely imagine a more comfortable knife in hand or a smoother performer. If you're looking for a knife with lots of feedback look elsewhere because this blade slips though most product so smoothly that you'll barely feel any resistance. The grind and edge are remarkably thin, yet the blade is still just heavy and stiff enough to stabilize and power your cuts, and the flat toward the heel makes solid board contact a breeze. The White 1 steel, perhaps the most traditional of the high carbon Japanese steels, makes this knife all the more classic and appealing. Completing the package are the exquisite kanji and FM stamp that place this knife in one of the most famous lines of the Japanese knife tradition. Was this rating helpful to you?
