Yanagiba knives were created for cutting sashimi. The long blade makes cuts even and graceful. They now are used in more general slicing tasks as well. These knives are made from high quality, high-carbon steel, in this case Aogami Blue #2. In order to retain their edge and add strength to the blade, they are constructed with a layer of softer iron on the outside of the core. Aogami Blue #2 is a high carbon alloy with added chromium and tungsten. These elements impart a toughness to the steel and aid in edge retention and overall durability. The alloy is hardened to 63-64 HRC. Of course the blade is going to be reactive so please make sure to thoroughly dry it after every use.

Over all this is a wonderful yanagiba. out of the box it is really sharp but the blade road is on the rough side but a trip to the stones will fix that up. Minimal high and low spots, the handle is ok nothing special. Over all a really nice knife and the great shipping and service from Mark.
