Kikuichi Swedish Warikomi Damascus. This is our most popular style of knife, the 210mm gyuto. It can be used in almost every situation in a kitchen! It is small enough for some detailed work, but large enough to tackle almost anything you throw at it.
This knife is made with multiple layers of nickel and stainless AEB-L steel, which creates a beautiful damascus pattern, as well as a super strong base that takes a super sharp edge.

Edge was surprisingly sharp out the box, even shaved some arm hair with it. Ended up choosing this knife because I wanted something super light and thin with Aeb-l (seems like a good heat treat). It checks all those boxes. Steel seems excellent so far, responds wonderfully to honing and aquires/holds a razor edge very well. Fit and finish are excellent, everything is nicely smoothed, looks even better in person. Love the handle, balance point is perfect for a pinch grip. Good belly for slicing (loves onions and veg prep) enough clearance for chopping if needed though. Only thing I can say negatively is that it just doesn't feel super solid if you are used to more substantial knives
