Harukaze G3 Nashiji Gyuto 210mm. Harukaze means "windy spring" in Japanese. These Harukaze knives have been made for CKTG exclusively from a medium-sized factory in Tosa, Japan. This is an excellent choice for anyone looking for a high-quality knife at a reasonable price. It starts with a core steel (G3) with an HRC of 62, then add a stainless steel cladding with a Nashiji (pear skin) finish to protect and beautify the blade. It is then finished off with a lovely oval magnolia wood handle with a pakka wood ferrule. As a bonus, it has a nice kanji engraving on both sides of the blade.

This is a very nice lightweight Gyuto. The Nashiji finish is done very nicely. It cuts great through Vegetables & Poultry like butter. I replaced the handle with a Desert Ironwood Wa handle to give it some additional heft in the rear of the blade. Nice balance. For the price I’m very pleased with it.Thx to CKTG for the fast shipping as always.

As others have mentioned, this is a great knife at a great price. Ginsan is awesome to work with and finishes well around 5000 grit in my opinion. Only thing is that the handle is a bit light for my liking but that can be easily replaced. Sharpness ootb was good but can definitely get sharper after a few minutes on the stone.

The knife is even better than I had hoped. Fit and finish is great! It is light, thin and flys through softer products like onions. This line offers a lot of bang for your buck and the hand engraving is a nice touch. I will definitely be buy more of this line.

I was considering buying an entire knife set on Amazon for my girlfriend, but opted for this one knife instead. I’m so glad I did. It is very sharp, the handle is cool compared to Western style handles, and the attention to detail on the blade itself is second to none.

I mange a prep crew in a restaurant.
I bought this knife to fill my light duty veg prep role at work, and its proved to be very versatile and easy to care for. The G3 core holds its edge well and resharpens easily.
I've bought 4 of them now because all my preppers, and the lunch chef, have all asked me to order one for them. I should get a commission...
I think its a tremendous value.
Handle does tend to get a little dingy so I would recommend sealing it with something, unlike me who now has a dingy handle.

The functional details are also excellent: really good grind geometry, edge etc. If looking for negatives the weak point is the handle, but it is *just* enough for me to be happy (i.e Magnolia + Petkka wood with no plastic). In the light of the price point, I think the right design decisions have been made.
The blade is good enough to warrant a custom handle (if CKTG offer this I'd recommend it). I'm considering exploring this option myself.
