If you stopped to take a look at this blade, buy it.
The grind is impeccable, R2 is excellent steel, and this is a well done piece.
I was looking for a very thin, very light petty. I was going to go Konosuke, but after a bit of deliberation chose the Takamura, and I am not disappointed. The knife is peerless, I have several 150mm petties, and they are used often for everything from work on the line, to prepping chicken, fish, and trimming steaks. This knife is incredibly thin, but still fairly stiff. Super lightweight, despite the western handle, and it comes somewhere around an 8/10 for OOTB sharpness.
Fit and finish are good, although of little concern to me, as this is a tool for work. If you need to cut garnishes, this is the knife for you. You will not be disappointed.Was this rating helpful to you?
