Some people think that the Saji Rainbow Damascus knife is the most beautiful knife made. It is hard to disagree with them. The unique multi-colored damascus is created by using alternating layers of rust-resistant stainless steel, brass, and copper. These added metals give the face that stunning rainbow pattern. But the beauty of these knives is more than skin deep. Takeshi Saji forges and finishes his blades with consummate care and attention to detail. His design, profile, and grinds are as well executed as his aesthetics.
These amazing knives are constructed with a core of Aogami 2 steel which is clad with the damascus steel in the san-mai style. The inner core is obviously prone to corrosion at the edge if not dried and cleaned carefully.
At 180mm, this is a knife that works well for most people. The height of 50mm gives knuckle clearance as well as room for chopping. This is a big performer capable of taking on almost every normal kitchen cutting task. The shorter and lighter size of this knife gives it a nimble quality that feels fast and, dare we say it, more fun! Most vegetables or proteins can be processed with no problem using a blade this size.

As a true foodie it is sheer delight to use a sharp knife. It is exacting w a perfect edge. The performance is second to none. The styling is beautiful and the weight perfection for its specific use. Would recommend to those interested in luxury in the kitchen.

Beautiful, finished very well, great balance, takes a superb edge. I was hoping this series would come back in stock as I thought it was gorgeous. It is more than I had hoped. It is a a top-notch knife than can do anything you might want from a knife of this style.

Phenomenal steel. A lot of fun to work with, takes and holds an edge as well as any other knife I own. It is the perfect size to use on a smaller line. My only issue is that the handle material is very slick, and the knife wants to work its way out of your hands at times.
