On my first trip to Japan I visited Mr. Kenishi Shiraki who at the time was considered one of the top blacksmiths in Japan. During my visit I met his young apprentice named Satoshi Nakagawa who had been working with Shiraki san for a couple of years. Now Mr. Shiraki has retired and Nakagawa san has taken over the business and is now a master smith in his own right.

Edge needed some stropping, which it responded to very well.
I knocked one star off because the grind is fairly thick going down until the point, but once you get into the tip it's fantastic on shallots.
Excellent fit and finish, handle is a touch heavy, throws off the balance a little bit.
Cladding is mildly reactive, wiped off onion reaction almost immediately after spotting, will develop into a wonderful patina.
