Kohetsu HAP40 Kiritsuke 240mm. We nicknamed HAP40 steel "voodoo steel" because it holds an edge seemingly forever. Manufactured by Hitachi, the steel can be hardened up to between 64 and 68 Rockwell. We chose 65-66 HRC. It is a fine grained steel that takes a very sharp edge. But of greater note is its almost supernatural ability to hold that edge. No other steel on the CKTG site gets even close to HAP40 in terms of edge retention. We have just started working with this remarkable steel and so far have been blown away by its strengths and abilities.
Please note, the knife sharpener intentionally thins the edges of these knives to make them perform better, especially on the tip area. Often times you will see a hazy/cloudy scratch pattern as a result. This is not a defect. Please look at the 4th photo on this page to see it.

I purchased the 175mm K tip & loved it so much that I picked up this 240mm bad boy! If knives were cars then this is a Ferrari. The edge is good out of the box & cimes to LIFE after a little while on 6000 grit stone! There is a fair amount of flex as this blade is lazer thin but still holds up when I cut apart hard produce like kabocha pumpkin, large carrots & potato. It demolishes onions & celery. It cuts protiens like a scalpel. I compare this knife to my 2009 Shun Kramer 10" and it is the polar opposite. The Shun Kramer is an axe compared to the Kohetsu which is a lazer scalpel.

Ive been using this for about six months almost everyday in a working a kitchen and its still about as sharp as it was the day i got it. it can do everything i need it to and then some. i bought because i wanted steel that wouldn't need to be sharpened a lot and it does not disappoint in that department. would recommend for anyone looking for an end game knife in this style of blade.
