This is a vegetable slicer.
If you don’t own a CCK cleaver you are missing out on one of the pillars of knifedom. That’s a bit of an exaggeration, but this type of knife and this brand in particular are possibly used by more cooks and chefs around the world than any other.
Chan Chi Kee (CCK) is a kitchen knife and supply company located in Hong Kong. They supply the local and international market with a full range of kitchenware and cutlery. They manufacture all of their cutlery in-house using fine steels and traditional methods, honed over decades.
The CCK Small Stainless Cleaver is a perfect tool for professional and amateur chefs looking for a maintenance free Chinese style cutter. This is designed as a vegetable slicer and chopper. It is not a heavy duty cleaver that would be used to chop bones and hard items. The blade is quite thin for this type of knife and it makes for a very easy to use processor of small to medium ingredients.
The CCK Small Stainless Cleaver is a great introduction to the fascinating world of Chinese cleavers. You will be amazed at how efficient and controllable it is. Around the world, many cooks say a cleaver is their number one knife for the majority of their cutting, slicing, and chopping duties. Try one out and you might agree! Highly recommended.Weight: 9.0 ounces

Overall Length: 315 mm (12.5")

Amazing cleaver
Update: this cleaver rocks!

About a year ago, when I received this product, I reviewed it with 4 stars, complaining about the handle and finish. I want to update it for 5 stars because I love this knife. It has become my primary device and basically I go to it for everything in the kitchen. It is easy to sharpen, takes a wicked edge and stays pretty darn sharp (for stainless, mind you). The weight and balance are great, its a laser and workhorse-y.
Though its no longer $40, it's still a special knife and I highly recommend. My nakiri and santoku dont get enough love anymore because its all CCK!!!

I have looked for a good quality cleaver for a very long time. I saw a video with chef Lucas Sin using it and he mentioned something along the lines that all Chinese kitchens use them, so I figured why not? I am so glad I bought it. I absolutely love how it cuts food. I also love how the handle feels hefty in the hand, i.e., the cleaver doesn't feel flimsy. The handle is great for pounding things like lemongrass.

This thing cuts like a laser. I was worried about weight, but it weighs much less than my current 10" chef knife. It does not matter if I am cutting lemon zest, garlic, or meat products, this is the blade that I grab. I absolutely love it. Also sharpens very easily for a stainless blade (I use naniwa chosera stones then black and green paste).

A bit heavy, but extremely efficient. Very happy with it.
Dealing with DHL for the shipping to Canada with DHL was however awful and took forever because of verification of duties and taxes not corresponding to the amount paid for the knife, or so they say.

I am a serious cook and was skeptical that this cleaver could outshine my 8 chefs knife. Well, it did!! I know own two and then bought a third as a gift. This implement is an essential in any kitchen.

Stir fry fanatic hereand had to have and use this CCK thin cleaver on my Cantonese and Szechuan recipes, and so glad I did. Mark sharpened this baby at a wicked12 degrees before I got it, and I've been keeping it up on ceramic rod and leather strop. It has been my new best cooking ally. Thin enough to do anythingthis knives drops through veggies, shears through proteins, and I use the tip to de-bone chicken thighs. It truly does it all, and keeps a great edge. Oh, and the slight height and mass (it is fairly light for such a big knife) makes for the cherry on top of the sundaeit's the best bread knife I've ever used!

I had recently read about some chef's using chinese cleavers, so I decided to get a CCK due to it's reputation. Out of the box was not super sharp, but 5 minutes on my 3k stone made it razor sharp! It is a very different experience using a tall cleaver vs. a chef knife, but now it's the first knife I reach for every time! The stainless gives is ease of use and cleanup ... if I would give any negative critique: it's that the food release is not the best ... potatoes, onions, peppers and anything with tall slices will stick to the side.

The knife itself is good, not that sharp out of box but, after a good sharpen, it was cutting very well. Weight and balance are excellent.
The handle is not so good, after a few days it started losing its color and disintegrating a little, i basically have to oil it every other use to keep it in good shape.
My knife also came with very clear glue marks/stains where the handle and and blade connect. Its no big deal, only cosmetic, but this is not a cheap cleaver and I expected a little more finesse. Overall, great at cutting but maybe, for the price, there is now a better cleaver you could find. Perhaps when these used to cost $40 they were more worth it.

Like this knife a lot. It is light and surprisingly easy to sharpen. Since it is stainless, it became my go to knife for most slicing of vegetables and meat. It is not suitable for chopping work since it is thinner than all the Chinese cleavers I own.

I had the carbon version of this and switched to better looking stainless version. It looks good, came sharp out of the box and just fun to use. And its not too heavy either like some cleavers i have tried.
This knife if VERY thin and goes thru produce easily. Try one of these and you will understand why this is the Chinese version of the chefs knife.

Worked well on my first task: breaking down and boning 4 chickens. I would like to have seen more information about sharpening this Stainless Steel item. Same tools and techniques as the non- Stainless cleaver?

This is the best knife I've ever used, and once I had one, I put the rest of my knives in storage. Not only is it fun to use, but my knife skills have doubled. I got one for each of my daughters (19 and 21) who love them, and swear by them as well. It's fast, accurate and safe as well.

Fantastic Cleaver with a very sharp edge. So cutting meat, poultry, fish, veggies or fruit is just a pleasure to work with.
This cleaver is NOT suitable for cutting bones etc. because the blade is very thin.

Great service and wonderful website for research. This knife is beyond awesome. I enjoy chopping now. Scary until you get used to it, now, I wouldn't use anything else for chopping. For me, stainless was the way to go.
