Arashiyama 1000 grit is a favorite of ours for an easy to use, affordable middle grit stone that can cut a wide variety of steels. It's a fast cutting stone that gives good feedback and can be used as your last stone for kitchen knives if you like a nice, toothy edge.

Nice stone. It was flat out of the box. I found it harder than both my Chosera and Cerax stones of the same grit. It’s a big stone, so it should last a long time. Great feedback, as it started squeaking when my angle was too steep. Two passes got Shirogami #2 stupid sharp.
My Chopper King loves it and it cut everything I needed with ease.
My only beef is the dark color makes it hard to see the metal removal. But all my permanent soakers are different colors now, which makes for easy identification.

This large stone is perfect for my long knives. Great price and sharpens quickly. I use a 5000 grit Chosera as a finishing stone but will sometimes stop at 1000 which works better when cutting dense fatty charcuterie.
