Out of the box, it shaved hairs. I put it to first use for prep for a wine dinner. 8qt brunoise mirepoix, no problem. 10# diced potatoes, with ease. Cooked protein, right through. To be critical of this knife I would say that veg tends to stick a bit while cutting. This was my first aus10 knife. I own a couple aus8 and was impressed by them enough to want to give this a try. I would say fairly comparable to vg10. It holds its edge real nice. A solid workhorse. The clad damascus is easy on the eyes.
