I do a fair amount of fish fabrication at work, most days 20+ lbs of catfish... filet, skin, and portion. Additionally I clean up cuts of haddock, and portion them, as well as chicken... Lots of chicken. I wanted a full size deba because using our shop filet knives has become tedious, and at times futile. Just not sharp enough to cleanly remove skin and large fat chunks without tearing up the meat. We all know that deba's can be extremely expensive, and this was going to be my first foray, so I didn't want to drop $400 for something I may not like, and probably would then never use.What I've found is a good knife, at a great price. The grinds are not perfect, but they are good, it was sharp out of the box, but once it hit the stones it really woke up. Easily saves me a couple minutes per fish. Technique is very easy to pick up, and the single bevel, and immense weight make getting between meat and skin or meat and fat without taking chunks out of the filet simple.
