CKTG is the only place where you can purchase these high value, high performance Kohetsu knives. Featuring a very well executed and thin grind, these AS blades are hardened to a Rockwell of 64. The stainless cladding reinforces the core steel and adds a protective layer to the carbon steel. The exposed edge will develop a patina after a while which will add further protection to the blade. The blade has a thinner than average grind and 60/40 asymmetrical edge.

Excellent knife for money

I got this knife 6 years ago, the edge retention is excellent and I keep it sharp mostly by strop. The handle is excellent quality and being stainless clad the blade is so easy to maintain.
I no chef but a serious home cook. Highly recommend this for anyone looking for a excellent knife, particularly their first as it is stainless clad. It’s also very easy to sharpen

I was looking for something a little longer than my 210 Tojiro and found this 240 Gyuto and fell in love with it. Jumped on it during the anniversary sale and I couldn't be happier with it. Out of the box edge is hair popping phenomenal and the fit and finish are well above knives in this price range. I have been using the knife for almost a month and the edge is holding up very well. I can’t wait to sharpen this knife as AS steel is my favorite steel. CKTG shipping is great and fast. Thank you for carrying such high quality knives at a price the average person can afford. Man, I just love this knife.

Had mine for a year and a half. Super thin blade, light as a feather, sharpens easily and retains it's edge for a long time. I've used it on 99% of tasks over the past year and a half. Well worth the $200! Will buy another when I've worn mine out. Hands down the best knife I've owned and holds it's own against much, much higher priced knives.

I would first like to start of that I have always relied on chefknivestogo for sharpening stones knives and more for quite some time now and I've bought the Richmond kohetsu before and received it as a gift on another occasion and I loved the knife so much I thought I buy it again but I was slightly disappointed to find that the fit and finish on the knife has seem to diminished slightly the heel of the knife was alittle rough and the spine as well and the edge and convex of the knife did not seem to perform as my other knifes received and there was a slight step between the ferrule and the wood so I did have to go and thin out the knife as well as finish of the heel and spine but for the money the knife can not be beaten its edge retention is superb and it makes a great work horse but due to the slight imperfections I had to give this only four stars

This knife gets stupidly sharp, and it holds its edge very well. I usually sharpen it once every few weeks just to keep it tuned up, but at its dullest it is still the sharpest knife I own. Aside from the edge, my favorite thing about this knife is the perfectly straight steering. My main chef knife was previously a 8 Henkel, which is decent, but there's nothing as frustrating as slicing cabbage or onion and having the knife kick out to the right, leaving you with an uneven slice. No such issues here, tomato, onion, cabbage, you name it, no problem.The sweep of the blade is really nice for chopping, and the way the knife slices through a big bunch of leafy greens infectiously satisfying. I really love the simple handle and ferrule design. It's beautiful, but minimalistic, and is perfect for a knife that I use every day. It doesn't need to be an opulent work of art, but there's an intrinsic beauty in the efficiency of design and functionality. The Aogami core steel develops a beautiful patina through normal use, which makes the knife uniquely yours as you use it. Finally, I don't know that I'll every be able to buy another knife with a wa handle that isn't octagonal. This one indexes perfectly, and feels awesome in my hands.For a little over $200 this is a deal that's hard to beat.

Excellent knife, I work in a restaurant that requires lots of morning prep. When i use this knife i fly threw it with barley any stress of pain in the wrist, to me the knife wasn't super razor sharp like i like it, i took it over a stone, then to touch it up with a leather strop and it was ready to go. A month of use and all i done is stropping and this knife preforms great.

I always take my new knives from the box to the stones but the ootb seemed above average. Dont be afraid of the High hardness either, ive had no issues with chipping, The F&F is also above par at this price point. This has become my go to knife in almost any situation. Thanks mark for creating a great afordable knife for us line dogs.

I've bought this knife as a gift to myself for my birthday, and I can say that I'm really impressed!The F&F of the knife is very good, everything is well rounded and the patina that will form makes the knife still more beautiful! The OOTB sharp wasn't actually great, but not a big deal, because the knife is very easy to sharpen (I'm still a noob) and the edge retention is out of this world. I recomend it to everyone that wants a really good wa-gyuto, but don't have the budget to buy more traditional knifes( By the way, something better that this will cost at least 130 more dollars).Thank you Mark for the help and to make this knife possible!Tom?s

This is a very good knife for the money. It is certainly not a cheap knife.The out of the box edge is very good. The handle is well done.Anybody considering an 8 inch chefs knife should consider this one because it's light weight and length is not exactly bulky.I don't feel like this knife is much larger than my 8 inch Shun classic.It will be very difficult to find a stainless clad knife made of this type of steel for under 200$.It can be overwhelming looking at taking the plunge into quality Japanese knifes.At it's price point I do not feel like I bought an entry level product.If you have skepticism about house branded products from Mr. Richmond, this would be a great ice breaker.Thanks to Mr Richmond for making this knife possible. A big thanks to Mrs Richmond for shipping fast.II do feel like I got a high end knife at a competitive price point.Once again I certainly do not feel like I bought an entry level product.

Really enjoying this new knife. It is quite sharp and glides almost effortlessly through all the veg I could find in the kitchen. The only problem I have now is to figure out what I am going to do with everything I have already chopped up.
