I own a bunch of chef knives/gyutos. Some cost a lot more than the Masamoto VG. And while this isn't the thinnest laser I own, nor is it the lightest most nimble knife I own, nor does it have the sharpest edge or the best retention. However, no single knife in my kitchen combines all those qualities either. What the Masamoto VG represents for me is quite possibly the best all around go to utility knife I've ever owned. The fit and finish and out of the box sharpness blows most any other western style gyuto away. The steel is well hardened which is what you expect on a Japanese knife and the blade is much thinner than you will ever find on a German knife but not a really thin knife in the Japanese sense. Still, its profile is just perfect for all around prep work in the kitchen. The handle is slightly bigger than you would find on say a Wustoff classic but the edges are more rounded. Perfectly balance at the bolster. CKTG shipping was lightning fast as always. If you can only have one chef knife in your kitchen this is the one to buy. The best all around western style gyuto in my kitchen by far..

Don't know if it holds the edge a lot but considering what I've been hearing and reading about it, I won't know for a while.CKTG's service: lots of positives, mainly price and how long it takes to be delivered (I got this and a Hiromoto Gyuto 240mm 2 days later... in London). One downside: my Masamoto came with scratches on its collar and rivets.

Masamoto chef knife has a great balance and good sharp edge. The only down side is the handle which I think is poorly made and finished. I can see grind marks on the sides and bottom of the handle.
