I’ve sort of bagged my really nice carbon steel blades that I’ve deemed collectible for stainless steel. My go to blade is a chopper king shirogami cleaver. Sometimes it’s a bit cumbersome and I wanted something a little smaller. I do most of the vegetable prep, so a nakiri is a logical choice. I hesitated because the reputation of them seems to lean towards a home knife.
Wrong.
This blade is fantastic. Stupid sharp ootb. Stupid. The Damascus is gorgeous and I cannot say enough about the blue maple handle.
It’s going in my collectible bag. I’ll buy another stainless nakiri for daily use.
