MAC Chef's Series 8" Dimpled Chef's Knife. The MAC chef series features the same Molybdenum alloy as the original series and offers a great value. The knives have sturdy riveted handles and are thin and relatively hard for good edge holding. This is a great introduction to Japanese knives and you will be surprised and very pleased if you have been using thicker, softer steel knives like many German brands when you see how well these cut.

Great MAC chef knife

I bought this chef knife as a gift for a friend because I already know the quality. The same model was given to me perhaps 4 years ago, and after preparing almost all the dinners since with that knife, it seem to be just as sharp. As a violin maker I totally value sharp tools, and that knife is just great.

The first cut I made with this knife made me laugh. It was like the celery wasn't there. I let the owner and two other cooks try the knife and we all agreed it was the sharpest knife we had ever used. Great knife and great service. Highly recommended

The only other "good" knife I have is a carbon steel santoku from Tsukiji Masamoto which is a joy to use but a little high maintenance for everyday use. I'm not a chef or even a great cook but both my wife and I cook just about every day so it would be nice to have a decent knife. Based on Internet reviews the MAC professional was top on my list. I'm familiar with the MAC brand and just wanted something sharp and low maintenance. I opted for the Chef Knife (instead of the professional) since I couldn't justify paying for the upgraded steel for our needs. So far the MAC has been a joy to use and very, very sharp. I can't store it in my pull out storage w/ a universal knife block that has plastic flex rods because it just slices through the flex rods if any of them are bent or slightly twisted. It is very light so chopping with it makes me feel uncoordinated compared to the Tsukiji Masamoto since that's a heavier knife. Slicing, however, is amazing and I can't believe we've gone so long without a decent knife. Chef Knives To Go was also a great find. I normally purchase everything on Amazon.com but several reviews where knock-off MAC branded knives were received got me a little concerned so I looked for a more dedicated vendor and Chef Knives To Go looked perfect AND they offered free shipping to Hawaii (which is so hard to find). The knife got here sooner than expected and packaged very securely. Should I decided to upgrade any more of my knives, Chef Knives to Go will be me first stop!
