Kurosaki Fujin AS Gyuto 210mm. The new Fujin series of knives from one of our most loved blacksmiths takes knife aesthetics to a new level. These are stunning blades in every regard.

Yu Kurosaki makes several different lines of knives under his own name. They have many things in common, including some of the best blade finishes in the business. From the frosty look of his Shimo line to the stunning hammered finishes on the Megumi and R2 Hammered blades, Yu Kurosaki has found a huge following of chefs, home cooks and knife lovers worldwide. Now he brings another revolutionary look to kitchen cutlery with these amazing looking Fujin knives.

Kurosaki is particularly adept in his treatment of select steels. In the case of the Fujin series he chooses to work with Aogami Super and has done a remarkable job with this alloy.

The edge profile is fairly flat with some nice curvature toward the tip. The knife is beautifully thin behind the edge, and as with all of his knives, edge sharpness out of the box is stellar.

These stunning knives are a wonderful addition to his line-up, and we believe they will become some of his most popular.

    Feels well balanced in hand, performs well, and has an eye catching appearance. Very satisfied overall.

    The only other AS knife I own is a Masakage Koishi and the differences between it and the Fujin are subtle. The Koishi's spine is thinner which is hardly noticeable-- until you get to the tip, where the Koishi glides through a bit better. Fit and finish between the knives is almost identical with my Koishi having a slightly rounder spine. The Fujin is about 20g heavier, so it overall feels a bit sturdier (without feeling heavy). The blade is a little flatter at the tip on the Fujin as well. I imagine the differences I'm seeing between these knives will vary, though, as no two knives in the same line are ever the same.

    Call me shallow, but I favor the Fujin for its aesthetic. The performance differences are just too subtle for me to care.

    Wow, much more than I was expecting! Very solid knife that performs like a laser but doesn't feel delicate. An excellent performer at very good price point, lots bang for the buck. Not too many knives surprise me anymore, this one did bigtime! Awesome look too!
