So, this knife was one of my firsts. Since then, I have acquired larger gyutos, sujis, Santoku, and nakiris of all caliber. This is still the knife I reach for. The stainless cladding is soft and definitely not scratch resistant. However, it stays sharper longer than anything else I own. The handle is basic and I love it. No frills workhorse worth using in a high volume kitchen. 5 stars, but around an 8.5/10 due to the scratching. Was this rating helpful to you?
