OOTB sharpness and F&F are superb. While this knife is on the smallish side, it has a nice backbone that gives me a great deal of kitchen flexibility when used in conjunction with the Kanjo gyuto.
I love R-2 steels as they hold a wicked edge for a long time, sharpen easily and being semi stainless steel do not have the care issues associated with carbon steel knives. Was this rating helpful to you?
