Harukaze AS 240mm Wa Gyuto. Meaning "windy spring" in Japanese, these Harukaze knives have been made for CKTG exclusively from a medium sized factory in Tosa, Japan. This is an excellent choice for anyone looking for a high quality knife at a reasonable price. It starts with a core steel (Aogami Super) with an HRC of 63, then add a stainless steel cladding to protect and finish the blade. It is then finished off with a lovely rosewood oval handle with a pakka wood ferrule. As a bonus, it has hand-engraved kanji on the blade, which is unusual at this price point.

    The fit ad finish are very good. The blade is ultra sharp out of the box. I tested many Vega. Carrots have always been the most difficult for me Juliann.
    This knife wen through them like celery.

    It will last the rest of my life!

    I recently moved across the country, as you do. I gave this knife to my roommate during the move, only the good stuff makes the cut I thought. I missed this knife so much that after a couple months on the east coast. I re-bought it for myself. This is a fantastic knife for me. Everything about it just fits

    I've had this knife for about 3 weeks now and I love it! Razor sharp right out of the box and I really haven't had to sharpen it. Keeps edge for a really long time. It's super awesome with small products as it cuts with precision, a little bit harder to use on big products like Pumpkins.. but overall awesome! Thank you Chef knives to go!

    the knife is so beautiful and works just as well as it looks. I love how nimble and lightweight this blade feels. usps was having trouble showing my shipping status so i emailed Susan and got a reply within minutes . within the hour updates started rolling in from USPS. I highly recommend this website for their products and superb customer service

    Was very excited to come home and finally open up my package. Great f&f and sharp ootb. Has a very slight step up from the handle to the ferrule, unsure if this was intentional. Prepped a case of beef and julienned carrots at work and it's already developed a beautiful blue-ish patina below the lamination line. After hours of prep, really glad to see it had kept a keen edge.

    I've used this knife just over a year and a half now. Many long days of prep etc. It's a fantastic knife. Great balance, low cutting fatigue, slightly brittle as one would expect.

    F&F is really good, high performance, high retention, fair price! Ive been abusing mine since the day I got it and it is doing really well. Still shaves hair and theres no signs of wear. Mine developed the edge patina and it looks stunning! Pictures dont do justice for this beauty. Would recommend!
