(Home cook.) I bought this knife here at least 10 years ago, along with a petit version. They're the ones I grab for just about every task. They sharpen very easily and stay sharp. The geometry allows very natural and untiring technique. After all this time the scales are a bit dull but still perfectly sound. The blade is thin enough to have that tiny bit of give that a full-stainless knife (or clad knife) won't have. This is an excellent real-world knife.

The fit and finish of this knife leaves very little to be desired. From the handle construction to blade profile to softened spine edges the knife has a great feel in the hand. Hefty enough for any task and light enough you can use it all day less than usual fatigue.

I've purchased quite a number of sharpening stones, stone holders and knives from Chefskknives to go, and have always had excellent service. The Masamoto Gyuto 210MM knife is my favorite and is the best knife I've ever owned, This purchase was my second Masamoto Gyuto simiply because I wanted to make sure I had one in reserve in case something happened to the original. Love this knife.

This is a wonderful knife, can't say enough about Masamoto knives. I have purchased many kitchen knives looking for the next best thing; I found it in the Masamoto KS 270. I will never need another blade. I wanted the same superior geometry/quality but in an easier to care for format that the VG provides for mothers day present. I found it in this blade, you can't ask for more at this pricepoint. I would be remiss if I didn't plug the KS again as well, best knife i've ever purchased and I've purchased quite a few! Grab one if you ever find them in stock, I prefer to the ever popular Konosuke HD.

This knife if the first Japanese made knife I've purchased. All my previous knives have been moderately priced American made knives. While they served me well, I wanted a premium chef's knife and purchased this one based on a you-tube video review. It is a well crafted knife and I love the thin taper and the 70/30 grind. Dicing onion is a breeze using the horizontal slice/vertical slice method; it just glides effortlessly through. I love the light feel of the knife, which gives it a nimble feeling. I couldn't be happier with my purchase. I must also give Kudos to Chefknivestogo; I always have my purchases in a matter of 2 or 3 days. They are very responsive.

I've used and owned many, many different brands and kinds of kitchen knives, and this is hands down my favorite. For me, it just feels *right*: the weight and balance are excellent, the handle feels right, and the profile isn't too shallow or too tall, and is plenty thin to glide through food. Edge retention so far has been excellent, and when I have needed to sharpen it I I can get the edge to an outstanding level of sharpness with minimal difficulty, despite it being stainless. I own a few other thinner, carbon steel, laser-like knives, and while they may be thinner and able to take a slightly keener edge, they're also only suited for certain kinds of applications, just feel more brittle/delicate, and require a little more TLC. Not so with this--if I'm in a rush and can't baby it, I don't need to worry about it. As a result of this combination of superior performance and easy maintenance, this has truly become my all-purpose knife. Highly recommend for someone looking to upgrade from the typical Wusthof/Henckels/Shun/Global/Victorinox chef knives. It's a whole different experience. One note if you do purchase this: to really get the most out of the blade, learn how to use waterstones to sharpen. It's not hard to do, and will make a major difference in performance.

Outstanding knife thus far. The feel, and weight are perfect, and its giving me the best of both worlds (thin, very sharp, holds its' edge, and durability that the VG-10 blades tend to lack. Buy this knife!
