The MAC Chef's Series features the same molybdenum alloy as the original series and offers a great value. The knives have sturdy riveted handles and are thin and relatively hard for good edge holding. This is a great introduction to Japanese knives and you will be surprised and very pleased if you have been using thicker, softer steel knives like many German brands when you see how well these cut.

This was my first introduction to j knives and really opened my eyes. Very sharp ootb with some toothyness to the edge. This knife really bites into the food and can handle pretty much anything. I prefer bolsters, but I don't mind the absence. It's pretty light and glides through food well. Probably my favorite for when I have to do a lot of prep and don't want to worry about how I treat the blade. Dimples don't really help though. Not the best edge retention, but it sharpens very easily. Good knife great value, always fast shipping and great customer service
