The Kanehide PS60 Petty 150mm is a really well made utility knife for all kinds of cutting work in the kitchen.
It is fashioned from customized steel called PS60 or Pure Steel 60. This is a derivative of the popular Gin5 razor blade alloy made by Hitachi. Kanehide takes the base steel and subjects it to a special heat treatment and cryogenic freezing regiment. The result is harder steel, up to HRC 60, and an edge that is tougher and more wear resistant than the original would be. All around, this an excellent steel which will find favor in both home and professional environments. Like its smaller 120mm sibling, the 150mm petty is a knife with less blade height than others at this length. So while this may be a minus for those with larger hands, it is a positive in that it makes for a light and nimble blade capable of taking on fine cutting tasks such as garnish preparation and the processing of intricate or small ingredients.
We are really impressed with the level of craftsmanship that has gone into these knives. Fit and finish are excellent, with well-rounded and polished choil and spine areas. The rosewood colored pakka wood handle is mated to a lovely stainless bolster which has a smooth and comfortable feel.

Fast Shipping! I have XXL hands so I use it like a paring knife with just enough blade height to clear my index finger first digit fold. I plan to buy another, its so good. It has so far stripped sharp with a couple weeks of daily use. It is a razor blade and cuts very well. i shaved my arm, leg, and part of my beard with it just to test the push cut abilities of the steel. It may be pricy, but so are the other well made, high quality things in life.

Im line cook in nyc and this is knife became my favorite and main knife. Is great for prep, for very fine petite cuts and also great for service as is small in size and doesn't take lot space as a chef's knife do.

What a terrific knife! Not as costly as some others on the site, but it's well made, nimble and a definite go-to smaller knife. Average size hands, average to less than average knife skills, but it sure raises my game and feels great to use.

The fit and finish is excellent on this knife especially for the reasonable price. It came out of the box extremely sharp and has a nice balance for a small knife. This will be a great knife for working a fast paced line.
