Harukaze means "windy spring" in Japanese. These Harukaze knives have been made for CKTG exclusively from a medium-sized factory in Tosa, Japan. This is an excellent choice for anyone looking for a high quality knife at a reasonable price. It starts with a core steel (G3) with an HRC of 62, then add a stainless steel cladding with a nashiji (pear skin) finish to protect and beautify the blade. It is then finished off with a lovely oval magnolia wood handle with a pakka wood ferrule. As a bonus, it has a nice kanji engraving on both sides of the blade.

This is a great knife value

I bought this for my teenage son, who is getting into cooking, as a gift. The knife was quite sharp out of the box and is surprisingly laser-y through veggies. I actually find myself using his knife more than my more expensive Kato AS bunka simply because it is similar performance and less hassle with the G3. The blade looks great, too.
The one downside is the handle. It's perfectly functional, but is rather roughly finished and feels cheap (this is obviously one way they were able to keep it under $100). But a quick sanding and a few coats of stain really improved it, if you're willing to put in a little work.
All in, very happy with this purchase and would highly recommend it to anyone looking for a santoku at this price point.

I normally buy carbon steel knives from Chefkivestogo...but this one was purchased
and given to a newlywed couple who will certainly enjoy this unique knife. Stainless
seems to be a better fit for them and learning to sharpen or not will be their decision
in the future. I hope they will learn at some point. Of course I have recommended

The Harukaze G3 Santoku 165 is excellent. The edge takes a little work (final sharpen and hone) to get the final edge. The blade has good sharpness retention. The pear skin cladding is very distinctive and I now prefer it to a polished hammered finish. All in all an excellent knife and highly recommended.

I bought this as my first knife. Since it's my first and only knife at the moment, I wanted something that was versatile. This knife came really sharp and the handle fits well in the hand. After some use the edge has held up well. I'm looking forward to continue using this knife and for the price, I don't think you can go wrong.

This line might be one of the top "unsung heros" at CKTG. I purchased the Santoku and the Nakiri to try out the G3 steel. So far it lives up to the reputation of sharpening like the Blue and White but with the added bonus of being stainless. The hand engraving is a nice feature...the Kanji "floats" on the steel. The big surprise is the sheer bang for the buck. These would make great gifts! The only negative of note is that the handle needs to be treated, but that's not worth detracting from the "excellent" rating (you could take the opportunity to change the color before sealing).

Again, excellent service, delivered with care and on time. This is my truly first Japanese knife, made by a relatively small shop, and I appreciate that. A beautiful Santoku, well balanced, comfortable grip with immense control. This knife might be my first Japanese knife, but surly not my last.
I would recommend this Harukaze G3 Nashiji Santoku as a good entry level Japanese kitchen knife.

I got this knife for everyday prep work at home. Extremely sharp out of the box. Since it is made of Ginsan stainless steel, I don't have to worry about rusting. It is easy to sharpen. Great knife for the price!
