Harukaze AS 210mm Gyuto. Made for CKTG exclusively from a medium sized factory in Tosa, Japan, Harukaze means "windy spring" in Japanese. This knife combines excellent core steel (Aogami Super) with stainless cladding and a very nice rosewood oval handle and pakka wood ferrule. The knives are finished off with a beautiful kanji that is hand engraved on the blade, which is unusual for a knife at this price. We predict these should be a big hit with our customers looking for an excellent knife at a good price.

I love this knife. Very sharp out of the box, easy to maintain as long as you are good about wiping the blade dry after use, and easy to keep a sharp edge. Nice looking, stainless clad carbon knife. Great value.

The knife has a very good value for the money, with it being AS. It takes a fine edge but I wouldn't take it past 8000 grit. It came pretty sharp OOTB, maybe 7 out of 10. The slim grind makes it slice through food pretty much like a laser, but inhibiting the performance is its polish - the food tends to stick to the blade, making the cutting experience not as smooth as a laser or other knives with non-sticking capabilities. This knife is not as reactive as other carbon steel core knives, but surely takes a kind owner to keep its beauty, and functionality. Over-all for the price and performance it is a very good knife, I wished they take the HRC to 64 - 65 so it can take a keener and a more longer lasting edge.

Pros: Takes a very sharp edge, can push cut paper after a few passes on the 6k. Maintenance is easy, and the edge retention is good. As a home cook, my cut strength is pretty low, so I feel the need to polish the blade every so often while I am prepping a lot of food but I do not think that is necessary for most users. The handle is comfortable and a good size for many hands. Fit and finish is pretty good. I find myself chopping more than rocking with this knife, but it feels natural doing either. Cons: Food is prone to sticking possibly due to the semi mirror polish. The polish on the stainless steel cladding is easily scratched (doesn't decrease performance though). Rock chopping with this knife took adjustment due to the fine tip, the tip definitely got stuck in board a few times.Love using this knife. A definite go to.

This is a really nice knife! Excellent fit and finish, lovely polished cladding - I was initially wary of wa handled knives, but this guy is so well put together! It has a super thin blade that comes with an amazingly sharp factory edge, lots of bite. However it does wedge on tougher vegetables. This can be cured by sharpening with higher grit stones (I used Naniwa 8000) and stropping (I used Dialux white). Still cuts standing paper, but does not wedge! However this is a very light knife (mine is 140g) and so cannot be abused to attack stubborn/hard vegetables. This is why I'm giving it 4 stars...perhaps a little unfair, as it is the perfect Japanese gyuto in all other respects. Highly recommended!

This knife is great. It'll shave your arm hair otb, it flies through produce and is great with fish and cooked beef. But, its very fragile. I take extremely good care of my knives, but within 24hrs the tip chipped. Also, if I put it through butternut squash or another tough product, it'll bend at the balance point. Ive had to bend it back to straight two or three times now. So, I recommend it, but even as a sous chef whose been cooking with japanese knives for years, this beauty does not like hard work.

I've had this knife a week now and it is super light.. I don't feel it takes away from the sturdiness at all. I've been flying through tomatoes and herbs.. very nice through the farm onions.. slicing steaks and Hickenlooper on the line.. have hit it on the steel a good amount and had some heavy work the past few days so maye the 6000 for a Polish but all in all a good knife..very happy with it.. first knife was kohetsu 240 as gyuto. Also a super knife love it

This knife gets me through a Saturday nights service on meat station in a Michelin starred restaurant in downtown Nyc. It feels like an extension of my hand. It's nimble, yet goes thru bone without hesitation. This knife is a steal at the price and one that should not be forgone.

Absolutely love the knife. So sharp it cuts things without any pressure whatsoever. This edge stays with matanence on 6K or higher. I would recommend to any new Japanese knife user but learn to sharpen correctly before buying. Wonderful knife I love every task using it.

I love the blade, for kitchen prep to breaking down hogs. Slight blemishes on the ferrule-to-blade easily fixed with hard beeswax. Knife shines with a polish on 6k or higher, mirror finished an attractive and versatile knife that is a pleasure to use.

Sharp. OOTB I was able to glide the knife through tomato skin just by lightly pulling the knife in one stroke! I've had this knife for about a month and I couldn't be happier. Handles soft product very well, I've never cut through a carrot so easily. The edge retention is a wow as well. I ran it on the stone, within a few strikes it was back to business. I feel like I'm on a higher level of knife with this blade. Would definitely recommend.

I was upgrading from my Fujiwara FKM 210mm, for a knife on the line at night. My workhorse is a Hiromoto 240 and I love the AS so Mark recommended looking at the Harukaze. My first impression OTB was that it seemed bigger than a 210. The Fit and Finish are really nice, my only complaint was on the handle where the tang connected to the handle wasn't treated and stained all the way. But this knife flies through product with a nice belly it really loves rocking, but can still throw down with a push cutting as well. My only complaint being a lefty is that the grinds not that great, food tends to stick to it pretty frequently but over all very happy with my purchase for the price its a real bargain

I wanted a smaller Gyuto when im working on the line at work, this knife is awesome. first thing i noticed is a super mirror polished finish as well as the warm handle, i have a buddy that used it who is left handed and loved it too since it is an oval handle.OTB edge is razor Sharp! ready to go IMO, but i took it to a strop before using, with the price at $150 its properly priced. The best thing i like about the knife too is the fact that you get the great edge of AS but it doesn't react as crazy as compared to my Kohetsu AS 240 gyuto.this is a must buy. definitely be keeping this in my bag
