Purchased to replace a set that I bought at WS about ten years ago that were similarly priced, but made in China and could not be taken down for cleaning, honing, or use as a quick utility blade. These shears are made in Japan, and enjoy the quality that follows from that pedigree. The pivot is adjustable, on top of being separable, so they will always cut all the way to the tip so long as they are properly cared for. Shears are a tool that should be in the knife roll of every pro, and the block of every home cook. No better tool for spatchcocking a chicken, opening containers, prying things, or cutting herbs. They are polished well which makes for an easy to keep clean surface, and sanitary use. I keep these in my back pocket along with a sharpie, a pen, and a digital thermometer every shift from prep to service, and I use them at least 25 times a day. By far the most borrowed tool in my kit, by everyone from bartenders and servers to the dishwasher. They seem expensive for a scissors, and they are, but remember that this tool, properly cared for will easily last a lifetime. Single best use discovered so far? Punching a hole in the top of fryer oil jugs to let air in as you pour, completely eliminating the glug, glugging, and associated splashing.
