A good pair of kitchen shears is an essential tool in any kitchen. They tackle a huge number of tasks and the Tojiro kitchen shears (FK-843) are one of our favorites.
The Tojiro pro kitchen shears are very high quality stainless steel shears that are made with a one-piece construction for durability, with the blades, tangs and handles cast in one piece. The micro-serrated blades are 4” long within an overall length of 8”, and the 3” loop handles are of equal size and shape for right- or left-handed use.
The Tojiro shears also feature a bottle opener, jar opener, and two screwdriver tips. They have an adjustable pivot joint that separates at 95 degrees for thorough cleaning and sharpening. These have a completely stainless steel construction and come apart for easy cleaning and sharpening.
These shears are super smooth and super sharp. The solid stainless steel construction feels sturdy in your hand, while the three-layer blade is ideal for general scissor use since it will retain its edge much longer, making these a multi-purpose tool for use all around the house or office.Weight: 5.4 ounces

I asked Mark for a recommendation for shears that can handle lobsters without effort; as always, his advice was spot-on! Sharp, comfortable and easy to clean - they've replaced two other cheap pairs and dismembered several crustaceans with ease!

Had been looking for some kitchen shears for a while, decided to give this one a try and so far I'm very happy with my purchase, sharpness out of the box was great and the fact they are all stainless steel makes for easy clean up and they come apart as well, I only wish the handle was a little wider but that's only personal preference , if you are looking for a great tool at a very reasonable price point this one will not disappoint!

My first task was dispatching some fresh soft-shell crabs and they were swift and nimble and didn't disappoint! Get these shears. $50?! They're worth well more than that.

The design of the shears is excellent, they fit nicely in your hand and the cutting quality is very good. However the material is lacking. After one wash there are rust spots and the shears are magnetic both of which implies a low quality of stainless steel was used. Love everything about about the design but disappointed in the material used to make them.

extremely smooth cuts with these shears. Easy to clean and re-sharp thanks to the reversible locking mechanism. In the kitchen i only use knifes. I use these shears for paper, card board and leather up to 2 mm. Works superbly

Purchased to replace a set that I bought at WS about ten years ago that were similarly priced, but made in China and could not be taken down for cleaning, honing, or use as a quick utility blade. These shears are made in Japan, and enjoy the quality that follows from that pedigree. The pivot is adjustable, on top of being separable, so they will always cut all the way to the tip so long as they are properly cared for. Shears are a tool that should be in the knife roll of every pro, and the block of every home cook. No better tool for spatchcocking a chicken, opening containers, prying things, or cutting herbs. They are polished well which makes for an easy to keep clean surface, and sanitary use. I keep these in my back pocket along with a sharpie, a pen, and a digital thermometer every shift from prep to service, and I use them at least 25 times a day. By far the most borrowed tool in my kit, by everyone from bartenders and servers to the dishwasher. They seem expensive for a scissors, and they are, but remember that this tool, properly cared for will easily last a lifetime. Single best use discovered so far? Punching a hole in the top of fryer oil jugs to let air in as you pour, completely eliminating the glug, glugging, and associated splashing. It's the little things that make you smile in the middle of a hectic shift.

Very high quality and sharp. Can tell they will last and be easy to sharpen when necessary. All metal, no plastic weak points to break. Extremely easy to take apart and clean- just open all the way and remove each half. Dry immediately after washing to avoid rust.
