The Nigara Silver 3 Damascus Kiritsuke 240mm is a beautiful piece of functional art.
During the early Edo Period, the city of Hirosaki was a castle town. There were over one hundred forging shops in the area. Nigara Forging is one of these historical Tsugaru blacksmith shops. The Nigara company has kept the traditional forging techniques alive and has remained committed to high-quality blade forging for centuries. I was so excited to see that CKTG brought in this stunning line. Nigara Hamono makes some of the nicest top tier knives I've ever come across and this kiritsuke meets every bit of quality and craft that you would expect.
Fit and finish are absolutely perfect! The choil and spine are both rounded for maximized comfort. The distal taper is fantastic but there's also a bit of additional tapering along the spine towards the tip that makes this knife extremely unique in appearance and performance. The handle is tapered perfectly for the size of the knife with the balance point right where I hold a pinch grip.
The knife has a good weight but because it's balanced so well it feels smooth and easy to use. It starts out pretty thick towards the spine but the grind brings the edge to a thin performer.
This knife is an absolute workhorse. Ginsan steel is always a dream to sharpen and this holds a great edge, especially with the higher heat treat on this blade. I've been running this knife pretty hard with prep this week and it's held up to everything, staying screaming sharp and continuing to perform throughout everything I've thrown at it. Food release is superb because of the amazing grind geometry. Also, since it's Ginsan it doesn't rust, or it's very very hard to get it to rust, so you don't have to worry about that while running through prep or service.
This knife truly is functional art. It looks just as stunning as it performs. I highly recommend this line or any knife by Nigara Hamono if you're thinking about it.
