I've owned this knife for years. It reminds me of a large Sab utility: it isn't quite a gyuto, but it isn't a petty either. It is unlike any knife I've owned, really, since it is smaller than a typical 210 gyuto in every way, but somehow feels more versatile and more robust than a 6" knife (gyuto or petty). What really shines about this knife is its exceptional, laser-like performance and extremely thin tip combined with a firm feeling steel and excellent feedback in the blade. It is also sharpens very easily and has a nice balance despite being light as a feather. Really wonderful through smaller, softer ingredients like melons and tomatoes and cucumbers, where its agility makes tasks like peeling or slicing off the board a breeze, while its grind makes slicing a chopping effortless.Was this rating helpful to you?
