This great looking gyuto is made from the ever popular VG-10 stainless steel. VG-10 is sometimes called V-Gold 10 and it is arguably the most commonly used stainless steel in the Japanese kitchen knife industry. There are several reasons for this, primary among them are its exceptional stain resistance and its ability to take a very sharp edge. Some VG-10 knives can be harder to sharpen than other steels but the smiths at Takayuki have developed a special tempering technique which results in a hardness of 60 HRC while being much easier to sharpen.

Returned to this storefront to see what else was in stock by Takayuki. This knife really accelerated my home cooking and made the process much more intimate. I don't have a problem with any German steel knives, but for the price of a smaller handmade production line, Takayuki (I've been using their VG10, like this 210mm) has been a no brainer and will serve my home kitchen for decades to come.

Im a young cook, the knifes we have are pretty crappy (from a $20 block set, 11 knifes and some other standard crap). I wanted a knife of my own and came to this one right here as my final choice. Its treated me pretty well over the last 2 weeks, ive been using it for all kinds of things from onions to mushrooms to mincing some bacon and i dont really have any complaints to speak of.
