These shears are traditionally used for bonsai but a growing number of pro and home cooks use them as kitchen shears. The material is used is hi-carbon steel including vanadium and is similar to Shirogami though Shirogami does not include vanadium. The hardness is about HRC60.

Bought these as a present for my friend but was able to use them a little bit the other day. They are very sharp out of the box, the large handles are very comfortable to use and in my opinion are a very attractive tool to boot.
