Kobayashi SG2 Damascus Gyuto 210mm. Kei Kobayashi is a young blacksmith who, until now, was mainly involved in knife sharpening and finishing. He's done some excellent knives for us over the past year and this is another beauty!

He has picked SG2 as the first steel he will be offering. The super dense grain structure and purity of SG2 make it both harder and yet less brittle than other similar steels. So we have a knife with the ability to take and retain a very fine edge that is also incredibly durable. It is this combination of outstanding edge performance and toughness that results in SG2 being considered by many to be one of the world’s best blade materials for use in kitchen knives. The inner core of SG2 is clad with a softer stainless steel for added protection.

These are lasers in the true sense of the word. They are super thin and very well finished. The spine and choil areas have been nicely rounded and the stainless jigane and comes with a beautiful damascus cladding on the knife. The knife comes with a very nice rosewood octagonal handle with maple ferrule. This is an impressive knife!

    Maybe not your starters knife. This puppy is thin! I put a few nice bends in my Kobayashi the first time I used it! Ugh, I know horrid! This is a blade for focused work. If you might come across bone or other hard items I would not go to this blade. If you are slaying veg prep and cutting cleaned meats, this is an amazing blade. It absolutely falls through ingredients, the profile is one of my absolute favorites! If you're a rocker or used to classic French profiles this is yours. There is some sticking to the blade, I think this has to do with the slight matte finish, but also due to the thinness of this blade. The handle is beautiful and the feel of this knife is superb. If you're looking to get into lasers this is a great choice! Just be aware! Lasers are far different than your standard workhorse.

    Great knife! Mine is in SG2 demascus and it works very well and came from the factory with a very sharp blade. Ran the steel across it after using it a few times and it has just gotten better and better. I also have a Kato Nikiri in HSS and it very good as well, but I am beginning to prefer the SG2.

    Pros - Most awesomely beautiful knife I own. The sharpest knife I own. Wonderful pinch grip. Skillfully and aesthetically constructed.
    Cons - Since knife is so light it balances in front of the pinch grip which encourages me to use the tip of the blade. That makes it great for fine work, but not so for mincing. Since blade is extremely thin, it sometimes catches on the cutting board. Since blade finish is matt, food sticks to it easily.
